The recipe for Traditional French Madeleines

For about 15 madeleines you need the following ingredients.

Ingredients

  • 2 eggs
  • 60 sugar
  • 20 g of honey
  • 40 ml of milk
  • 120 g butter
  • 120 g flour
  • 5 g of baking powder
  • 1 lemon, organic

Preparation

Preheat your oven to 200 ° C (fan oven). In a bowl, add the eggs, sugar and honey. Beat with a whisk until the mixture gets white and fluffy.

Then add the flour, baking powder, milk and butter. Grate the zest of a lemon.

If you have time, let the dough rest for 2 hours in the fridge, if you do not have time it is not mandatory (learn more about this in my article Traditional French Madeleines). Then pour the dough into madeleine molds.

Put the madeleines in the oven and turn off the oven. Leave in the oven for about 3-5 minutes until the bump forms. Then, turn the oven back on and cook for another 3-55 minutes (depending on the size of your molds) until they are golden.

1. Icing Sugar Madeleines

After letting the madeleines rest for 5 minutes, the first decoration idea and also the simplest is: the Madeleines with Icing Sugar.

Ingredients

  • 1 tablespoon of icing sugar

Preparation

Sprinkle the madeleines with icing sugar when they are still warm.

2. Chocolate and Coconut Madeleines

The coconut and chocolate mixture, it always works!

Ingredients

  • 50 g dark chocolate
  • 1 teaspoon of coconut oil
  • 1 tablespoon of grated coconut

Preparation

Melt the chocolate and coconut oil in a water bath or in the microwave. Dip the tip of the madeleines on the shell side in the chocolate. Add a little grated coconut. Let cool before eating.

3. Chocolate and Almond Madeleines

Another mix that works and this time I decided to dip the whole madeleine in chocolate for even more taste!

Ingredients

  • 50 g dark or milk chocolate
  • 1 teaspoon of coconut oil
  • 1 tablespoon of crushed almonds

Preparation

Melt the chocolate and coconut oil in a water bath or in the microwave. Dip the madeleines on the shell side in the chocolate, holding it by the bump. Add a little crushed almonds. Let cool before eating.

4. Lemon and Pistachio Madeleines

This is one of my favorite decorations in terms of taste: the lemon icing added to a few crunchy pistachios!

Ingredients

  • 40 g icing sugar
  • 1 teaspoon of lemon juice
  • 1 tablespoon of pistachios

Preparation

In a bowl, mix the icing sugar and lemon juice until you get a smooth icing. Dip the madeleines on the shell side, holding the madeleine by its bump. Add some pistachios. Leave to rest for 1 hour before tasting.

5 Lemon and Lemon Zest Madeleines

And I end with my favorite version! The lemon glaze madeleine with a little lemon zest. It’s a delight.

Ingredients

  • 40 g icing sugar
  • 1 teaspoon of lemon juice
  • 1 lemon, organic

Preparation

In a bowl, mix the icing sugar and lemon juice until you get a smooth icing. Dip the madeleines on the shell side, holding the madeleine by its bump. Grate the lemon on the madeleines. Leave to rest for 1 hour before tasting.
