For this recipe, you only need a few ingredients:

  • Fresh ginger : fresh ginger adds a touch of freshness to these cookies and a deliciously spicy note.
  • Oatmeal: Oatmeal replaces flour and it gluten-free.
  • Peanut butter: Peanut butter is used as a fat. It replaces butter. It is lactose free and brings a delicious peanut taste to these cookies.
  • Bananas: choose ripe bananas. Bananas add texture to the cookie dough and also serve as a natural sugar.
  • Honey : honey is used in addition to bananas as a natural sugar.
  • An egg : the egg is used to bind the dough.
  • Baking powder: baking powder is used to aerate these biscuits and make them soft inside.

How to use fresh ginger in baking?

Many ginger cookie recipes use ginger powder. For this recipe, I used fresh ginger.

Ginger being a root, it is relatively stringy. If you cut it, you may get threads in your cookies. My solution is to use an aroma grater like the one from Triangle. As you’ll see in the recipe video, this aroma grater allows you to scoop out the ginger flesh while leaving the fibres on the roots.

Recipe for Breakfast Cookies with Fresh Ginger

For 20 cookies, you need the following ingredients:

Ingredients

  • 5 cm of fresh ginger
  • 200 g oat flakes
  • 150 g peanut butter
  • 2 bananas
  • 1 tablespoon of honey
  • 1 egg
  • 4 g baking powder

Preparation

In a bowl, mash the bananas with a fork. Mix the baking powder with the oatmeal and pour it into the bowl. Add the peanut butter, honey and egg.

Peel the ginger and grate it with an aroma grater. Mix everything together until it forms a homogeneous paste.

Form balls and place them on a baking sheet lined with baking paper.

Bake the cookies at 175°C for 15 minutes.
