For this recipe, I was inspired by cauliflower pizza recipes. However, the texture looked more like a galette than a pizza, so I decided to call this recipe a Cauliflower Galette with Spinach and Mushroom. This recipe in perfect as a main course or to share as a starter.
How to make a cauliflower galette?
For this recipe, I was inspired by cauliflower pizza dough recipes. The advantage? This recipe is low in gluten and also low carb. Plus, you may be able to get the kids to eat vegetables!
To prepare the cauliflower-based galette, you must first chop the raw cauliflower very finely to form a cauliflower rice. Then bake the cauliflower for 15 minutes in the oven. Then, I made a dough made from precooked cauliflower, flour, eggs and grated cheese.
For this recipe, I used wholemeal rye flour but you can replace the flour with wheat flour or gluten-free flour like buckwheat flour mixed with a little powdered almonds and cornstarch.
Then, I then formed a galette that I placed on parchment paper and I pre-baked it in the oven before turning it over and adding my toppings. I chose a spinach, mushroom and cheddar for toppings but you can vary the ingredients!
Recipe for Cauliflower Galette with Spinach and Mushroom
For about 4 galettes, you need the following ingredients.

For the cauliflower galette
- 1 cauliflower
- 2 eggs
- 125 g wholemeal rye flour or other type of flour
- 4 g of salt
- 75 g grated cheese
- Pepper
For the toppings
- 300 g fresh spinach
- 250 g mushrooms, cut into strips
- 100 g cheddar cheese, grated
- Chili flakes
- Salt
- Pepper
- Olive oil
Preparation
Step 1: Prepare the cauliflower galette
Preheat the oven to 175 ° C.
Chop the cauliflower with a knife and a blender to form a rice.
Place the cauliflower rice on a baking sheet lined with parchment paper and bake at 175 ° C for 15 minutes.
In a bowl, pour the baked cauliflower rice, flour, eggs, grated cheese, salt and a little pepper. Mix well and form a ball.
Divide the ball into 4 equal portions and flour each of the balls. Place a portion of the dough on a baking sheet lined with parchment paper. Roll out the dough to form a circle about 1 centimeter thick.
Pre-bake the galette for 15 minutes in the oven at 175 ° C.
Tip: You can pre-cook all the galettes in advance to save time when serving!
Step 2: Garnish the cauliflower galette
Turn the precooked galette over and add some fresh spinach, a few slices of mushrooms and a handful of grated cheddar cheese. Add a good dash of olive oil. Season with salt, pepper and chili flakes.
Bake for 15 minutes in the oven. Serve immediately.
