Cherry Tomatoes, Basil and Thyme Bruschetta
What could be better for an aperitif than Bruschetta! To change a bit from the classic Bruschetta, I made some delicious Cherry Tomatoes, Basil and Thyme Bruschetta.
Bruschetta, perfect for an aperitif!
Bruschetta are perfect for an aperitif. First of all, the bruschetta are 100% vegan and lactose free, if you do not add mozzarella as in some recipes. They are therefore suitable for many types of diet which is useful when you have guests with dietary restrictions.
Moreover, they are relatively healthy because they contain almost only tomatoes, which balances perfectly a classic aperitif often focused on fatty and salty foods.
The other advantage of bruschetta specific to the following recipe, and that you can kill two birds with one stone for an aperitif: I prepared a Homemade Hummus which I used to garnish my Cherry Tomato, Basil and Thyme Bruschetta.
This allows the cherry tomatoes to sit better on the slices of bread. And in addition, I can then serve the hummus on the side to accompany the aperitif!

Recipe for Cherry Tomatoes, Basil and Thyme Bruschetta
For about 12 bruschetta you need the following ingredients.
Ingredients
- 12 slices of baguette-type bread
- 200 g cherry tomatoes
- Herbs: Thyme, basil and flat-leaf parsley
- 2 tablespoons of black olives, Kalamata type
- 40 ml olive oil
- 1 teaspoon of white vinegar
- 1/2 garlic clove or a small clove
- 100 g of hummus, see my recipe for Homemade Hummus Without Garlic
- Salt
- Pepper
Preparation
In a bowl, pour the olive oil, the white vinegar and crumble the thyme (about 8-10 branches). Add cherry tomatoes cut in half as well as the coarsely cut black olives.
Chop the garlic clove then finely chop the basil and the flat-leaf parsley (about 1 handful of each). Add everything to the cherry tomatoes. Add salt and pepper. Mix well.
Toast the slices of bread. Spread them with hummus. Then drop a tablespoon of cherry tomatoes.
Note
You can also add capers and anchovies to the tomato salad.
Do not hesitate to let the tomatoes marinate with herbs, olives and olive oil for 2-4 hours, this will enhance their taste to the maximum!
