This is one of my favorite kale recipes! Perfect for a winter meal, this Creamy Kale and Mushroom Pasta recipe is a treat.

Creamy Kale and Mushroom Pasta Recipe
For 2 servings you need the following ingredients:
Ingredients
- 250 g of pasta
- 1 bunch of kale
- 150 g mushrooms
- 100 g of crème fraiche
- 1 clove of garlic
- 1 pinch of dried chilli (optional)
- Parmesan cheese
- 1 handful of toasted hazelnuts
- Salt
- Pepper

Preparation
Step 1: The pasta
Heat some water with a little salt. Once the water boils, add the pasta. Cook them as directed on the package.
You can use any type of pasta: spaghetti, fusilli, orecchiette, casarecce etc. For this recipe, I used casarecce!
Step 2: Mushrooms
Chop the garlic. Wash the mushrooms and cut them into halves or quarters.
Then heat a little olive oil in a pan over medium heat. Add the garlic, then, after about a minute, the mushrooms. Garlic must not darken!
Step 3: Kale
First, wash and dry the kale. Cut it into pieces. Then add it to the mushrooms. Kale should not cook too long to keep it firm.
Add a pinch of dried chilli. Add salt and pepper.
I like that my kale stays crunchy. To do this, I add half of the kale at the start of cooking and the rest 1 minute before the end. The second half should be cut finer because it does not cook for long.

Step 4: The sauce
Once the pasta is almost cooked (about 1 minute before the pasta is finished cooking), add the crème fraiche. Stir well.
Before draining the pasta, take a glass of pasta water (about 10 cl). Add the pasta water to the sauce. Drain the pasta and add it directly to the pan.
Step 4: Presentation
Place a portion of the dough on a plate. Sprinkle with coarsely chopped toasted hazelnuts. Add Parmesan as you wish!

How to vary this Creamy Kale and Mushroom Pasta recipe?
You can vary this Creamy Kale and Mushroom Pasta recipe, here are some ideas:
- For a vegan version, replace the crème fraîche with a vegan cream based on cashew nut .
- Replace the crème fraiche with pesto.
- Replace the mushrooms with dried tomatoes. You don’t need to stir them, you can just add them at the end of cooking.
