A classic of German cuisine: the Crumble or Streusel cake! You can find it with apples, cherries or, like here, plums. As a French girl, I didn’t know this type of cake before, I only discovered the Crumble or Streusel cake when I came to Germany. I immediately became a huge fan!

Recipe for Crumble (Streusel) cake with plums
This recipe for Crumble (Streusel) cake with plums is made for a normal baking sheet (approx. 37-40 cm long and 28-32 cm wide).
Ingredients
- 2.5 kg plums, incl. stones (maximum 2.5 kg)
Cake dough:
- 4 eggs
- 100 g sugar
- 8 g vanilla sugar
- 200 g soft butter or margarine
- 250 g flour
- 100 g almond flour
- 1 packet baking powder
Crumble:
- 150 g soft butter
- 200 g flour
- 60 g sugar
- 8 g vanilla sugar
- 1 tsp cinnamon
Preparation
Step 1: The cake dough
Preheat the oven to 160°C (circulating air). Whisk the eggs, sugar and vanilla sugar with a stirrer. Add butter or magarine and whisk again until creamy. Then add the flour, almond flour and the packet of baking powder and mix well.
Line a baking sheet with baking paper and pour the dough on it.
Step 2: The Plums
Wash, drain, halve and stone. Place on the cake dough.
Step 3: The Crumble
Mix together the flour, sugar, vanilla sugar and cinnamon. Add the soft butter. Knead briefly with your hands to a crumbly dough.
Step 4: Baking
First, place the cake with the plums in the oven for 10 minutes. After 10 minutes, spread the crumble over the plums and bake for another 40 minutes.
