No time to make classic croissant dough from scratch? These quick puff pastry croissants are the perfect solution for a spontaneous brunch with friends or a cozy weekend breakfast. Fill them with jam, chocolate, or even try a savory twist—they always impress!
A Quick Note Before We Start
Of course, nothing beats homemade croissants made with a proper laminated dough. If you’ve never tried it, I highly recommend checking out my full croissant recipe. But when I’m short on time or expecting guests, these little express croissants do the trick beautifully.
I always go for a high-quality all-butter puff pastry, sometimes I get it from a local bakery, other times I use a good one from the grocery store. After that, the folding and rolling are just like with traditional croissants. Note for US readers: Puff pastry is widely available in the freezer section of most grocery stores. Look for all-butter puff pastry if you can—it makes a big difference in flavor and texture. Brands like Dufour or Trader Joe’s are great options.

Ingredients
- 1 sheet of all-butter puff pastry preferably rectangular (thawed if frozen)
- 1 egg yolk
- 1 teaspoon milk
Optional fillings:
- Jam your favorite flavor
- Chocolate pieces or chips
Instructions
- Preheat your oven to 350°F (convection) or 375°F (standard bake).
- Roll out your puff pastry on a clean surface. Cut it into 6 to 8 triangles.
- Add a small amount of filling near the base of each triangle (jam, chocolate, ham and cheese) or leave them plain.
- Roll each triangle from the base up to the tip, forming a crescent shape. Don’t roll too tightly.
- Place them on a baking sheet lined with parchment paper. Press the ends slightly to help seal in the filling.
- Mix the egg yolk and milk, and brush the tops of the croissants with the mixture.
- Bake for 25 to 30 minutes, until golden and puffed. Let them cool a few minutes before serving.
Notes
Freeze: You can freeze baked croissants for up to 1 month. Let them cool completely, then wrap tightly and place in a freezer bag.
