Sometimes the best ideas really do come at the last minute – like these delicious Canapés with Figs and Comté cheese. They are super easy to prepare, look beautiful and are perfect for the Christmas season. You can even prepare them several hours in advance without losing any of their flavor or texture. Ideal as an appetizer that is guaranteed to delight your guests!

The round cookies, reminiscent of gingerbread bites, have a yellow topping, star-shaped seeds filled with jam and a hint of green topping, all beautifully arranged on a speckled plate.

In France, the aperitif is an important part of family celebrations or evenings with friends – especially popular as a prelude to a festive Christmas menu. Small snacks and a glass of wine or champagne are enjoyed together while chatting and relaxing.

I still had a few slices of spiced bread (French pain d’épice) and some Comté cheese left from my last recipe, so I thought: why not put them together? I added a little fig jam, some fresh thyme, and spread everything with salted butter to balance the sweetness. An unexpected delight!

Equipment

  • 1 Linzer cookie cutter or round cookie cutter

Ingredients
  

  • 6 slices of gingerbread not too thick
  • 3 tbsp salted butter
  • 1-2 tbsp fig jam
  • 100 g Comté cheese
  • fresh thyme

Instructions
 

  • Cut the gingerbread slices into small circles or shapes. Optionally, lightly toast the gingerbread pieces in a pan for 1–2 minutes per side to make them crispier.
  • Cut the Comté into thin slices, about the same width as your cookie cutter. Then use a small cutter (a Linzer cookie cutter works great) to punch out a second circle in the center and create a little hole.
  • Spread the gingerbread pieces with salted butter, add a small dollop of fig jam and place the Comté on top so that the jam remains visible. Be careful not to use too much, so the canapés stay stable.
  • Garnish with a little fresh thyme and serve immediately, or store in the refrigerator for a few hours in advance.
