Here is a Healthy Hummus and Cherry Tomato Tartine recipe, very easy to make! I like to prepare this kind of tartine either for breakfast or for a quick lunch.

If I prepare this tartine for the breakfast, I make it with a Homemade Hummus without Garlic. You will find my recipe here.

A healthy tartine recipe for breakfast

If you are a subscriber to my blog, you must have noticed that I regularly offer healthy bread or tartine recipes for the breakfast.

It’s a way to start the day that I love, especially on the weekends. I like to prepare a large and savory breakfast with for example an Omelette, a tartine with salmon, spinach or scrambled eggs. Together with a cup of coffee: it’s my ideal weekend ritual!

If there is one meal that we sometime forget to vary, this is breakfast. Probably because early in the morning, we lack of inspiration. However, this is a shame, because it is a very important meal and there are so many ideas of recipe for breakfast . Here are some ideas of my creations for you:

This Healthy Hummus and Cherry Tomato Tartine recipe is particularly refreshing, perfect for spring or summer. And what’s more, it’s 100% vegan and lactose free!

Healthy Hummus and Cherry Tomato Tartine

Recipe for Healthy Hummus and Cherry Tomato Tartine

For two tartines, you need the following ingredients.

Ingredients

  • 2 bread slices or a bun cut into two
  • 2 tablespoons of hummus (see my recipe for Homemade Hummus without Garlic)
  • 1 handful of yellow and red cherry tomatoes
  • Herbs: thyme and basil
  • extra virgin olive oil
  • Salt and pepper
  • Pea shoots for decoration (optional)

Preparation

Wash the cherry tomatoes and cut them into quarters. Put them in a bowl and add a drizzle of olive oil, salt and pepper. Crumble the thyme and add the leaves (without the stem) to the cherry tomato salad.

On your bread, spread the hummus. Add a spoonful of cherry tomato salad over the hummus. Decorate with young shoots of peas.
