Hummus, Mushroom and Soy Sauce Toast
Here is an original and simple recipe for Hummus, Mushroom and Soy Sauce Toast. These toasts are perfect for a quick meal during the week or a savory breakfast on the weekend. You can even serve these toasts in small portions as an appetizer. The icing on the cake: these toasts are 100 % vegan!
3 reasons to eat toast!
If you are a subscriber to my blog, you’ve probably already noticed that I love toasts. And yes, for me it is one of the easiest, cheapest and fastest meals to make. In addition, there are many ways to vary the recipes for toast.
- A quick and easy meal at the same time: Toasts generally require little or no cooking. When I work from home at lunch and don’t want to spend my lunch break in the kitchen, I love to make toast as a main dish.
- A healthy and balanced meal : Toast can be healthy and balanced at the same time. For this, choose bread made from wholemeal flours such as rye or spelt. And above all, don’t hesitate to add vegetables to your toast. I also like to serve my toast with a small green salad or tomato salad on the side.
- A way to eat leftovers! We don’t often think about it, but toasts are a great way to reuse leftovers: Have you prepared leftover grilled vegetables but don’t have enough left over for a whole meal? Serve them on toast with hummus or pesto! Leftover cheese: perfect for grilling on toast!

Recipe for Hummus, Mushroom and Soy Sauce Toast
For 2 servings you need the following ingredients.
Ingredients
- 4 slices of bread
- 150 g mushrooms, cut into strips
- 100 g hummus (see my recipe forHomemade Hummus Without Garlic)
- 1 dash of soy sauce (about 10 ml)
- 1 lime
- Neutral oil
Preparation
Toast the slices of bread.
To toast your bread slices, you can either toast them in the toaster or in the pan that you will use to sauté the mushrooms, with or without a drizzle of oil.
Then prepare your hummus if you make it homemade. Find my recipe of Homemade Hummus without garlic, very easy and fast to make.
In a pan, heat a drizzle of oil. Then add the mushrooms. Sauté for 5 minutes. Then, at the end of cooking, pour a drizzle of soy sauce, about 10 ml.
Spread hummus on your slices of bread and place the mushrooms on top. Finish with a few drops of lime and a little pepper.
