I present to you my 2022 Christmas Menu. This year, I chose a French style menu with quality products and keeping it simple so I can enjoy this wonderful day of the year with my family without spending all my time in the kitchen.
In addition to my menu, I also give you some advices concerning the food and wine pairing by choosing for you some French wines worthy of the finest tables!
Aperitif
For the aperitif, I chose salmon canapés. It’s a simple idea, but beautifully decorated with dill and lemon zest, these canapés will be a hit.
Food and wine pairing: Champagne, of course!
Starter
For the starter, I chose a classic of French cuisine: a Goat cheese, Apple & Pear Filo Parcels or Aumônières in French. Served with a green salad, these filo parcels are a quite light appetizer that will please everyone.
Food and wine pairing: This appetizer goes well with a nice white Burgundy wine such as a Bourgogne Hautes Côtes de Beaunes or a Saint-Véran.
Main course
For the main course, I chose a very special butcher’s cut: Filet mignon of beef tenderloin, served with a red wine and Christmas spices sauce. A very refined dish, but still easy to make so that you don’t have to spend all day in the kitchen.
Food and wine pairing: To accompany this beef tenderloin, I recommend you to stay in Burgundy but with a red wine of the most elegant like for example a Nuit-Saint-George or a Chassagne-Montrachet.
Side dish
To accompany this beef tenderloin, I chose two side dishes: a parsnip puree and sauteed carrots with thyme and honey.
Parsnip puree is lighter than classic mashed potatoes and is therefore particularly pleasant as an accompaniment to a hearty meal. I seasoned it with lemon and thyme to give it a fresh touch.
Sauteed carrots with thyme and honey are a great Christmas classic and go very well with beef. To give this side dish a festive touche, I chose a mix of rainbow carrots (orange, yellow and purple).
Desserts
For the desserts, I have planned two mini desserts that are both delicious and easy to make, and I guarantee that they will be unanimously appreciated: Christmas Apple Roses and Chocolate Cake with Melting Heart or moelleux au chocolat.
My advice: If you have children, preparing these desserts with them will be a great activity on Christmas Day to spend a nice moment together in the kitchen!
Food and wine pairing: For these two desserts, there is nothing like a Crémant, as for exemple a Crémant de Limoux.
