Here is a delicious recipe for Orange and Cardamom Cake. Cardamom has a delicious, slightly lemony and floral taste that pairs really well with orange! Perfect for winter accompanied by chai tea for example!

Where does cardamom come from?

Cardamom is a plant native to the Southeast Asia. In cooking, it is especially its fruit that we consume or rather the seeds present in the fruit. There are two types of cardamom: green and black.

In baking, green cardamom is used more often because it is more fragrant and black cardamom will be used more in cooking. Traditionnellement, on retrouve la cardamome dans les currys ou les desserts notamment de la cuisine indienne. It is also one of the spices used to make chai tea.

How to prepare cardamom?

Cardamom seeds are found either in powder form. Or, you can found it in form of dried pods.

Cardamom powder is very easy to use: it is used a bit like cinnamon, that is to say that with just a little bit of powder you will enhance the taste of a dish or a cake.

If you use cardamom pods, which I recommend because the aromas will generally be more intense, you should prepare the cardamom as follows:

  1. Open the cardamom pod with a knife and take out the small black seeds inside.
  2. Use either the seeds as they are to infuse them in a tea for example.
  3. Or, put the black seeds in a mortar and crush them with a pestle to make a powder which you can then use like any other powdered spice.

Orange and Cardamom Cake Recipe

For a cake for 8 persons, you need the following ingrédients:

Ingredients

For the cake

  • 1orange, untreated
  • 4 eggs
  • 125 g butter
  • 150 g flour
  • 80 g ground almonds
  • 5 g of baking powder
  • 100 g of plain yogurt
  • 60 g sugar
  • 1 teaspoon of icing sugar

For syrup and decoration

  • 2 oranges, untreated
  • 50 g sugar
  • 8 cardamom pops

Preparation

Step 1: Cardamom

Start by preparing the cardamom powder. Cut the cardamom seeds in half using a knife. Take the small black grains that are inside.

Place the grains in a mortar. Then, crush them using the pestle to obtain a powder.

Step 2: Orange syrup and the decoration

Cut one of the oranges in half and press to get its juice. In a small saucepan, melt the sugar with the orange juice. Mix well, then add half of the cardamom powder (the rest will be used for the cake). Leave on the heat until the mixture thickens. Then remove from the heat and let it cool.

Cut the other orange into thin strips and place the strips in the syrup. Leave to infuse while you prepare the rest.

Step 3: Cake

Start by taking the zest of the orange. Add the icing sugar and set aside. Cut the orange in half and press to get the juice.

In a bowl, add the eggs, sugar and the rest of the cardamom powder. Beat until the color of the mixture gets lighter.. Then add the butter. Mix again.

Mix the flour and the baking powder, then pour everything into the bowl. Add to the bowl the ground almonds, yogurt, orange juice and orange zest mixed with icing sugar. Mix one last time.

Step 4: Bake

Preheat the oven to 175 ° C (conventional heat).

In a cake pan, place parchment paper cut in a circle. If necessary, butter the part not covered by the baking paper.

Place the orange strips infused in the syrup in the bottom of the mold. Reserve the rest of the syrup for later.

Then pour the cake batter over the oranges and bake for 35-40 minutes.

Once the cake is cooked, place a plate on the cake and turn it all over to unmold the cake. Pour the rest of the syrup over the cake.
