Looking for an easy homemade sandwich that is special at the same time? I recommend this recipe for Panini with Halloumi and Grilled Zucchini. Quick to prepare, healthy and delicious at the same time!

How to prepare halloumi?
Halloumi is a Mediterranean cheese, more precisely from the island of Cyprus. It is also found in Turkey and other countries in the Near East.
The particularity of this cheese is that it has a very firm consistency which allows it to hold well during cooking. There are several ways to prepare halloumi:
- In the pan : Cut the halloumi cheese into slices. Then add a little olive oil to a hot pan and brown the halloumi slices for about 2-3 minutes on each side. The cheese is ready when it is nicely colored but not too grilled.
- On the grill : Brush the halloumi slices with oil then place them directly on the grill. Turn them over after a few minutes. This technique will add roasted aromas to the cheese.
- In the oven: Place the halloumi slices in a glass dish covered with olive oil and bake at 220 °C (420 °F) for 10 minutes. You can add vegetables around as well. Depending on the size of the vegetables, it will be necessary to place the vegetables 10 to 15 minutes before the halloumi so that they are well cooked.

Recipe for Panini with Halloumi and Grilled Zucchini
For 2 panini you need the following ingredients.
Ingredients
- 2 panini breads
- 1 zucchini
- 1 halloumi, about 200 g
- 2 tomatoes
- 20 basil leaves
- 4 sprigs of thyme
- Salt
- Pepper
- Olive oil
Preparation
Wash the zucchini and cut it into thin slices lengthwise.
Drain and cut the halloumi into slices about 1-2 cm thick. Wash the tomatoes and cut them into slices.
In a frying pan, add a dash of olive oil. Then, place the zucchini slices. Sauté for about 1-2 minutes on each side. Season with salt and pepper and set aside.
In the same pan add the halloumi slices. Sauté for 1-2 minutes on each side, adding a little olive oil if the cheese sticks too much to the pan.
Finally, remove the halloumi and place the panini bread slices in the still hot pan, the crumb facing the pan to toast the bread lightly.
Assemble your panini by starting with a few slices of grilled zucchini, halloumi, tomatoes, a few basil leaves, crumble the thyme on top. Season with salt and pepper and add a drizzle of olive oil. Close the panini.
Note
Optionally, you can toast the panini in a waffle iron or panini machine to make it crispier on the outside. As I didn’t have one, I served it as is and it was very good!
