7 Savory Tarte Tatin Ideas!

One of my favorite dishes when I’m craving something vegetarian, healthy, and quick to prepare is a savory tarte Tatin! I make them all year round. The concept is simple (and foolproof!): crisp, golden pastry baked on top of vegetables that cook slowly underneath, soaking up all their natural juices and flavors. Here are my favorite savory tarte Tatin recipes, delicious as a light main dish or in mini versions for a fun appetizer spread.

Before we dive into ideas for savory Tarte Tatin variations, make sure to check out the original recipe first – the classic apple Tarte Tatin. It’s one of my absolute favorite desserts!

Which Pastry Should You Use for a Savory Tarte Tatin?

You’ve got several options, depending on the result you’re after. Personally, I almost always go for a homemade shortcrust pastry, which I tweak slightly depending on the recipe: maybe a pinch of dried herbs, a few fennel seeds, or even a bit of grated Parmesan to boost the flavor.

  • Homemade Shortcrust Pastry – This is the most classic choice and, in my opinion, the best fit for savory tartes Tatin. It soaks up the vegetable juices nicely while still staying easy to slice and serve. For even more flavor, I love making mine with olive oil instead of butter, it adds a subtle Mediterranean touch that pairs beautifully with roasted vegetables.
  • Puff Pastry (see my homemade recipe) – This is a favorite for many because it bakes up light, flaky, and crisp. It works beautifully with certain fillings, but be careful: vegetables that release a lot of water, like tomatoes, zucchini, or leeks, can quickly make the pastry soggy once the tart is flipped out of the pan.
  • Store-Bought Pastry – Super convenient when you’re short on time, but try to choose a good-quality one, ideally made with real butter or olive oil for the best flavor and texture.

👉 My tip: If you want an elegant tart that holds its shape and slices neatly, go with shortcrust pastry. But if you prefer something light, airy, and extra flaky, then puff pastry is the way to go!

1. Zucchini Tarte Tatin with Burrata

One of my favorite variations for summer! No need to pre-cook the zucchini, they bake gently in the oven and keep all their flavor. Add a handful of toasted pine nuts on top for extra crunch.

2. Tomato Tarte Tatin

The sunny version of a savory tarte Tatin! I use multicolored cherry tomatoes that slowly caramelize in the oven, perfect with an olive oil shortcrust pastry and a drizzle of balsamic vinegar.

3. Leek Tarte Tatin

A simple version I love in winter: the leeks turn soft and slightly sweet as they bake. I like to finish it off with a bit of feta or fresh goat cheese on top, absolutely delicious!

4. Caramelized Onions Tarte Tatin

This is the recipe that first made me grow on social media, and for good reason! This caramelized onion tarte Tatin is truly amazing. The onions become melt-in-your-mouth tender and slightly sweet, thanks to a splash of balsamic vinegar. It’s the perfect dish for an elegant appetizer that’s guaranteed to impress your guests.

5. Tarte Tatin with Fennel and Parmesan

An original and refined recipe: the fennel turns tender and slightly sweet as it bakes, beautifully enhanced by the bold flavor of Parmesan.

6. Caramelized Carrot Tarte Tatin

This is the milder, slightly sweeter version of a savory tarte Tatin, perfect for anyone still on the fence about caramelized onions. Roasted carrots bring a wonderful depth of flavor, making this dish just as comforting as it is delicious. An ideal winter recipe!

7. Endive and Brie Tarte Tatin

A recipe I love to make in winter! If you’re a fan of Belgian endives like I am, you’ll fall for this endive tarte Tatin: the endives turn tender and silky in the oven, pairing perfectly with creamy, melted Brie.

What to Serve with a Savory Tarte Tatin?

For me, this often works as a main dish, paired with a simple green salad for a light, balanced meal.

But you can also serve it as an appetizer, in small individual portions. And if you’re looking for more ideas, I’ve gathered 40 side dish recipes for quiches, and they pair just as beautifully with savory tartes Tatin!
