This weekend, I wanted to go green! I took everything I had green in my fridge and here is the result: a Tartine with Avocado, Mint and Lime. It’s healthy, refreshing and full of flavor. Perfect for breakfast, a brunch or a quick meal. In addition, it is a 100% vegan and lactose free !
Recipe for Avocado, Mint and Lime Tartine
For two servings you need the following ingredients.
Ingredients
- 4 slices of bread or two bread rolls
- 1 avocado
- 1 handful of fresh or frozen spinach
- 8 cucumber slices
- 4 sprigs of fresh mint
- 1 lime, organic
- Olive oil
- Salt
- Pepper

Preparation
In a pan, heat a little olive oil. Add the spinach and sauté for 3 minutes. Add salt and pepper.
Cut the avocado in half, remove the flesh and mash it with a fork. Add a dash of lime juice. Chop the mint leaves.
Spread avocado cream on the bread slices. Add some spinach, 2 cucumber slices and a bit of mint. Season with salt and pepper.
Add lime zest, lime juice and a drizzle of olive oil.
