Here is a recipe for Vegan Oatmeal Chocolate Almond Cookies. The recipe is quick and easy to make.

A vegan recipe, without butter or eggs!

For this vegan cookie recipe, I replaced the butter and eggs with the following ingredients:

  • Coconut oil: I chose to replace the butter with coconut oil because it brings a nice coconut taste that goes perfectly with chocolate. I always prefer organic coconut oil!
  • Applesauce: Applesauce replaces eggs in vegan recipes. It is used to bind foods together and give texture to cookies. Don’t worry about the apple, you won’t taste it!

Recipe of Vegan Oatmeal Chocolate Almond Cookies

To make about 20 small cookies, you need the following ingredients:

Ingredients

  • 140 g oats
  • 40 g flour
  • 70 g coconut oil.
  • 40 g brown sugar
  • 75 g apple mousse
  • 40 g chocolate chips
  • 30 g almonds
  • 1 tsp. baking powder

Preparation of the cookies

As this is a very quick recipe, you can already start by preheating the oven to 175°C.

Then melt the coconut oil. Personally, I melt it in the microwave at low temperature. Coconut oil melts very quickly (from 25 – 30°C).

Then, in a bowl, mix the coconut oil, sugar, flour, yeast. Add the applesauce. Mix well. Then add the oat flakes, chocolate chips and almonds cut into small pieces.

Form small balls with the dough. Place them on a baking sheet covered with baking paper. Bake in the oven for 15 minutes.
