It looks like this would be the new trend on social media! After the Baked Feta Pasta, here is Pizza Babka! I couldn’t help but try it, however, I adapted the recipe slightly by combining different recipes to create my version of the Vegetarian Babka Pizza.

This Babka Pizza is perfect as an aperitif or to accompany a barbecue in summer.

What is Pizza Babka?

I think I don’t need to explain what pizza is! For those who have doubts about what a babka is: it is a braided brioche traditionally filled with chocolate, almonds or candied fruit. It is a pastry of Eastern European origin often served at Easter.

Pizza Babka is basically a fusion between pizza and babka. The idea is simple, you have to prepare a savroy brioche or babka dough which you then garnished like a pizza with tomato sauce and mozzarella. You can add salami or pepperoni. I personally made a vegetarian version. This recipe was inspired by the recipe of Bill clark which made this Pizza Babka so popular on social media.

Recipe for Vegetarian Babka Pizza

For about 12 portions, you will need the following ingredients.

Ingredients

For the babka dough

  • 400 g flour
  • 2 eggs
  • 150 g of lukewarm milk
  • 120 g butter
  • 10 g sugar
  • 12 g of salt
  • 4 g dry yeast
  • 1 tablespoon of oregano or thyme, dried

For the tomato sauce

  • 400 g canned tomatoes
  • 3 g of salt
  • ½ onion
  • Pepper

For the garlic butter

  • 60 g butter, melted
  • 6 sprigs of flat-leaf parsley, finely chopped
  • 2 garlic cloves, chopped

For the toppings

  • 200 g of mozzarella

Preparation

In a small bowl, pour the yeast, milk, sugar and a tablespoon of flour taken from the total amount. Mix and let stand 15 min while the yeast activates. It will start to foam.

In a large bowl, pour the flour, salt, oregano then the yeast-based preparation. Mix.

Then add the eggs and butter. Mix well and knead the dough for a few minutes until it is smooth. Cover with a clean cloth and let stand at least two hours. The dough must double in volume.

Meanwhile, mix the tomatoes with the onion, salt and pepper. Check the seasoning.

For the garlic butter, melt the butter. Add the finely chopped flat-leaf parsley or chopped garlic.

Drain the mozzarella and cut it into thin strips.

Preheat the oven to 175 ° C (conventional heat).

Then remove the air from the dough and using a rolling pin, roll out the dough to form a rectangle.

Place about ¼ of the tomato sauce on the dough and spread it well. Place the mozzarella to form 3 to 4 rows of mozzarella lengthwise.

Then roll up the dough on itself. Cut it in half and braid the dough to form a babka.

Using a brush, spread the garlic butter over the babka.

Bake for 35 to 40 minutes. Then serve with the tomato sauce.
