What to do with pumpkin? What if we tried a burger! Here is a delicious recipe for a Vegetarian Pumpkin Burger.

Red kuri squash vs Pumpkin

Red kuri squash are vegetables from the Cucurbitaceae family in other words a type of pumpkin. Red kuri squash is smaller has a more red in color than the traditionnal Halloween pumpkin.

The red kuri squash is found in North America as well as in Japan. Its other name is “Hokkaido squash”. Its weight varies between 1.5 and 2 kg per piece. It is very easy to cook because its skin is thin enough to be eaten when cooked or grilled. No need to peel it!

The taste of red kuri is particularly sweet with a nutty taste! It is delicious in soup or grilled as in this recipe for Butternut Squash, Chickpeas and Feta Salad where the butternut squash can be replaced by a red kuri squash!

Vegetarian Pumpkin Burger Recipe

To make 4 veggie burgers, you need the following ingredients:

For the pumpkin cake

  • 200 g of pumpkin puree
  • 40 g oatmeal
  • 100g of flour
  • 1 egg
  • 1/2 tsp. 1 teaspoon ground coriander
  • Dried chilli
  • 3 g of salt
  • Pepper

For the burger

  • 4 burger buns (See my recipe for Homemade Burger Buns )
  • 1/2 pomegranate
  • 4 salad leaves
  • 1 handful of arugula
  • 2 tomatoes, cut into rings
  • Lime, juice

For the sauce

  • 4 tablespoons of plain yogurt
  • 4 tablespoons of sour cream
  • 6 sprigs of flat-leaf parsley
  • salt
  • pepper
  • Olive oil

Preparation

Step 1: Pumpkin patty

Cut the pumpkin into cubes. Cook them in a saucepan with a trickle of water so that the cubes do not stick. Once the pumpkin is cooked, mix it to obtain a puree.

Combine the pumpkin puree, oatmeal, flour, egg, salt, pepper, cilantro and dried chili.

Heat 2 tablespoons of olive oil in a pan. Place a ladle of pancake dough. You should get about 4 ladles so 4 patties. Sauté for 5 minutes on each side.

Finally, place the precooked pancakes on a baking sheet covered with baking paper and bake them for another 10 minutes at 175 ° C.

In order to obtain well-rounded pancakes, you can use a pastry ring covered with oil to prevent the dough from sticking. Remove the pastry ring after 1-2 minutes of cooking and continue cooking in the pan without the ring.

Step 2: Sauce

Mix the yogurt and the sour cream. Chop the flat-leaf parsley and add it to the sauce. Add salt and pepper.

Step 3: Prepare the burger buns

Cut the burger bun in half. Place the burger bread halves crumb side down on a skillet. Heat for 1 minute, taking care that the bread does not darken.

Step 4: Assembling the burger

Start by placing on the lower part of the burger bun, a tablespoon of sauce, a salad leaf, the pumpkin patty, two tomato slices, a few arugula leaves, and pomegranate seeds.

You can add a squeeze of lime juice to enhance the taste of the burger. Finally, add a spoonful of sauce and close the burger with the upper part of the bun.

Enjoy immediately!

  • Replace the pumpkin with sweet potato
  • Add some feta cheese
  • Place a slice of Mozzarella on the hot patty at the end and add everything while still hot in the burger!
