Quiche Lorraine, one of my favorite classics of French cuisine! If you’re looking for a vegetarian version, without lardons (aka bacon) but just as tasty, this recipe is for you. I chose smoked tofu as an alternative: so good that even non-vegetarians love it!
Smoked Tofu: The Ultimate Alternative for a Vegetarian Quiche Lorraine
Smoked tofu is really perfect for replacing lardons in the classic Quiche Lorraine recipe. Here’s why I love it:
- Similar to bacon flavor: thanks to its smoky, slightly salty taste, it gives you that classic Quiche Lorraine flavor.
- Easy to find: it’s now available in most grocery stores and health food shops.
- Quick to prepare: you can add it straight to your quiche, or, like I do, sauté it with onions and parsley for extra flavor!
For the rest, you need the classic Quiche Lorraine ingredients: shortcrust pastry, eggs, grated cheese, cream and a little milk!

- 1 11-inch quiche or tart pan 28 cm
Ingredients
Homemade Shortcrust Pastry
- 1 ⅔ cups all-purpose flour 200 g
- 7 tbsp cold butter cubed (100 g)
- ¼ cup cold water 60 ml
- 1 tsp salt 5 g
Vegetarian Quiche with Smoked Tofu
- 1 tbsp olive oil
- 1 yellow onion finely chopped
- 7 oz smoked tofu cut into small cubes, 200 g
- ¼ cup curly parsley chopped , 15 g
- 4 large eggs
- ¾ cup crème fraîche or sour cream, 200 g
- ¾ cup milk 200 ml
- 1 ½ cups grated cheese Gruyère or Emmental, 150 g
- Salt and pepper
Instructions
- Preheat the oven to 350°F (180 °C) convection (or 375-400°F conventional).
- Make the shortcrust pastry: mix flour, salt, and butter until you get a sandy texture. Add the water, form a dough ball, and chill it for 30 minutes.
- Sauté the chopped onion in olive oil, then add the smoked tofu cut into small cubes. Season with salt and pepper, then sprinkle with parsley.
- Roll out the dough, place it in your tart pan, prick with a fork, cover with parchment paper and baking weights, and blind-bake for 10-15 minutes. Remove the weights and paper.
- Spread the tofu-onion mixture evenly over the crust.
- In a bowl, whisk the eggs with the crème fraîche, milk, and grated cheese. Season with salt and pepper, then pour over the filling.
- Bake for 35-40 minutes until the quiche is golden brown. Serve warm or at room temperature with a fresh salad.

- Storage: This quiche can be eaten within 3–4 days, stored in an airtight container in the fridge.
