For this recipe, I was inspired by cauliflower pizza recipes. However, the texture looked more like a galette than a pizza, so I decided to call this recipe a Cauliflower Galette with Spinach and Mushroom. This recipe in perfect as a main course or to share as a starter.

Step 1: Prepare the cauliflower galette
Preheat the oven to 175 ° C.
Chop the cauliflower with a knife and a blender to form a rice.
Place the cauliflower rice on a baking sheet lined with parchment paper and bake at 175 ° C for 15 minutes.
In a bowl, pour the baked cauliflower rice, flour, eggs, grated cheese, salt and a little pepper. Mix well and form a ball.
Divide the ball into 4 equal portions and flour each of the balls. Place a portion of the dough on a baking sheet lined with parchment paper. Roll out the dough to form a circle about 1 centimeter thick.
Pre-bake the galette for 15 minutes in the oven at 175 ° C.
Tip: You can pre-cook all the galettes in advance to save time when serving!
Step 2: Garnish the cauliflower galette
Turn the precooked galette over and add some fresh spinach, a few slices of mushrooms and a handful of grated cheddar cheese. Add a good dash of olive oil. Season with salt, pepper and chili flakes.
Bake for 15 minutes in the oven. Serve immediately.
