Grilled Zucchini with Oregano

Zucchini is one of my favorite vegetables. And one of the easiest ways to prepare it is to roast them in the oven with a little garlic and olive oil. To season, I added dried oregano. Here is my recipe for Grilled Zucchini with Oregano.

Ingredients
  

  • 600 g zucchini
  • 3 whole garlic cloves
  • 2 tablespoons dried oregano
  • 50 ml olive oil
  • 1 pinch of salt

Instructions
 

  • Preheat the oven to 180 °C (fan oven).
  • Wash the zucchini and remove the ends. Cut them in half and then in 4 lengthwise.
  • Place them in a salad bowl. Add the olive oil and oregano. Mix well. Personally, I mix it all together directly with my hands so that the oil and oregano spread evenly over the zucchini.
  • Place the zucchini on a baking sheet lined with baking paper. Add the whole garlic cloves.
  • Roast in the oven for 15 minutes. Allow to bake for 5 minutes more if necessary. Salt and serve with homemade pesto.

Notes

These zucchini are delicious cold with a salad or on toast with pesto and mozzarella.
