Cranberry Compote with Vanilla and Cinnamon

What to do with fresh cranberries? Simply a compote! Here is an original and winter recipe for a Cranberry Compote with Vanilla and Cinnamon. I love to serve this compote on my porridge in the morning, it is also great on a slice of brioche, a croissant or yogurt.

Ingredients
 
 

  • 300 g fresh cranberries
  • 2 apples small
  • 70 g cane sugar
  • 1 teaspoon of cinnamon
  • 1 vanilla bean or vanilla extract

Instructions
 

  • Wash the cranberries and dry them. Peel the apples and cut them into small pieces. Open the vanilla bean and scrape out the seeds.
  • In a small pot, pour the cranberries, apples, sugar, cinnamon and vanilla. Mix everything well. Close the pot with a lid and cook over medium heat for 15 minutes.
  • Stir the compote well once cooked, then let it cool.

Notes

Don’t forget the lid because the cranberries “explode” in the pan and they may stain. You will hear “pops” like with popcorn, it’s perfectly normal!
