I must confess that I am not a big fan of fried sweets. They taste often too much like oil for my taste. If like me, you’re craving healthier fried apple rings, here’s my recipe for Healthy Apple Rings. It’s a healthy version because there’s no frying and even no butter in the dough! The result is impressive because the apple rings remain super soft once cooked.
In a bowl, mix the flour, baking powder, sugar and cinnamon. Then add the eggs and yogurt. Mix the mixture well with a whisk or a food processor to obtain a homogeneous paste. Let stand for 10 minutes.
Meanwhile, remove the cores from the apples with an apple corer and peel them. Cut them into fairly thick slices.
Heat a little butter or oil in a pan. Dip the apple slices in the batter and place them on the hot pan. Fry for about 2 minutes on each side over medium heat.
Let cool for 10 minutes on a plate. This way, the batter will gradually melt into the apple.
My tip: I then microwave the apple rings for 30 seconds before covering them with cinnamon sugar. The texture is then just perfect!
Finally, mix in the sugar and cinnamon reserved for decoration. Cover the doughnuts with the cinnamon sugar. Enjoy immediately.
