Healthy Hummus and Cherry Tomato Tartine

- 2 bread slices or a bun cut into two
- 2 tablespoons of hummus see my recipe for Homemade Hummus without Garlic
- 1 handful of yellow and red cherry tomatoes
- Herbs: thyme and basil
- extra virgin olive oil
- Salt and pepper
- Pea shoots for decoration optional
Wash the cherry tomatoes and cut them into quarters. Put them in a bowl and add a drizzle of olive oil, salt and pepper. Crumble the thyme and add the leaves (without the stem) to the cherry tomato salad.
On your bread, spread the hummus. Add a spoonful of cherry tomato salad over the hummus. Decorate with young shoots of peas.
