Ingredients
1 tortilla
1avocado
3eggs
50gcheddar cheesegrated
1red onion
Salt and pepper
Chili flakesoptional
Olive oil or other type of oil
Instructions
Start by breaking the eggs into a bowl. Add salt and pepper. Add a chili flakes if you like it. Beat the eggs.
In a frying pan add a little oil, then pour the eggs. Stir constantly for a few minutes until the scrambled eggs are cooked.
Cut the avocado in half, remove the core and mash it with a fork. Cut the red onion into thin strips.
Then, cut the tortilla in its radius (i.e. as if you were going to cut it in half but stopping in the middle).
Place a portion of scrambled eggs, avocado, cheddar cheese and red onions on each quarter tortilla.
Fold each quarter over each other in a clockwise direction (see video ).
In a pan, heat a little oil and heat the wrap for about 1 to 2 minutes on each side.
