Instructions
For the tartar sauce, start by slicing the pickles and capers finely. Then chop the white part only of the spring onion. Chop the tarragon, parsley and chervil.
Finally, mix the mayonnaise, hard-boiled egg yolk, mustard, pickles and herbs. Add salt and pepper. Mix well. Your tartar sauce is ready.
For the fish patties, start by chopping the fresh fish. Place it in a bowl and add the egg, breadcrumbs, finely chopped chives, and the zest of half a lemon. Add salt and pepper. Mix well and form 4 rather thick patties.
In a frying pan, add a drizzle of olive oil and brown the fish patties for about 3-5 minutes on each side. Cover the pan with a lid while cooking.
Toast the burger buns. Spread each side with tartar sauce. Then place on the lower part of the burger bun a slice of salad, 3 slices of cucumber, the fish patty, 1-2 slices of tomato, arugula and a little dill. Season with salt and pepper and add a few chili flakes (optional). Then close with the top of the burger bun.
