Oven Roasted Carrots with Hummus

Here is a very simple recipe, vegan and healthy at the same time: Oven Roasted Carrots with Hummus! These carrots can be served as a starterside dish or even as a main course with Turkish pide bread or focaccia.

Ingredients
  

  • 12 multicolored carrots orange, yellow, purple
  • 1 pomegranate seeded
  • 100 g of hummus see my recipe forHomemade Hummus without Garlic
  • 6 stems of parsley
  • Salt and pepper
  • Olive oil
  • Lime optional

Instructions
 

  • Wash the carrots and peel them. Place them on a baking sheet covered with a baking mat or parchment paper.
  • To oil the carrots well, I place them in a bowl and add a generous drizzle of olive oil. Then, mix the whole with my hands, distributing the oil well on all the carrots.
  • Add a pinch of salt. Then roast the carrots for 25 minutes in the oven at 180°C (fan oven).
  • Meanwhile, prepare your hummus if you are making it at home.

  • Place the hummus on a plate. Place the carrots on top. Add a pinch of pepper, the pomegranate and a few parsley leaves. Finish with a drizzle of olive oil and possibly lime.
  • Serve with Turkish pide bread or focaccia.
