Oatmeal with Cranberry Compote and Cinnamon

In winter, it is not easy to find ideas for toppings for your oatmeal. While preparing my Cranberry Compote with Vanilla and Cinnamon recipe, I thought it would go great with my oatmeal!
I simply added some frozen raspberries and a pomegranate I had on hand and in the end, the result was so good that I ate it all week. Here is my recipe for my Oatmeal with Cranberry Compote and Cinnamon.

Ingredients
 
 

For the basic oatmeal recipe

  • 1 cup of oats 80 g
  • 1 cup of oat milk 230 mL
  • 1 cup of water 230 ml
  • 1 banana mashed
  • 1 teaspoon of agave syrup

For the Cranberry, Vanilla and Cinnamon Compote

  • 300 g fresh cranberries
  • 2 small apples
  • 70 g cane sugar
  • 1 teaspoon of cinnamon
  • 1 vanilla bean or vanilla extract

For other toppings

  • 1 apple
  • Frozen raspberries
  • Cinnamon
  • Pomegranate
  • Granola

Instructions
 

  • For the oatmeal, place all the ingredients in a small pot. Bring to a boil, then cook for 10 minutes on low heat. Then let cool slightly and mix well.
  • Meanwhile, prepare the cranberry compote. In a saucepan, pour the cranberries, apples, sugar, cinnamon and vanilla. Mix everything well. Close the pan with a lid and cook over medium heat for 10 minutes.
  • Cut the apple into thin strips and remove the seeds from the pomegranate.
  • Place one portion of oatmeal in a bowl. Place a spoonful of cranberry compote, a few apple slices, frozen raspberries and pomegranate seeds. Finish with a pinch of cinnamon.
