Mushroom, Feta and Red Onion Quiche

It really is one of my favorite dishes: quiche! So French but also so good. What I love most about quiche is that you can make quiches with almost anything. Today, I am sharing with you a recipe for a Mushroom, Feta and Red Onion Quiche.

Ingredients
  

For the shortcrust pastry

  • 250 g of flour
  • 60 ml olive oil
  • 70 ml of cold water
  • 3 g of salt
  • 1 egg

For the quiche

  • 250 g mushrooms
  • 1 red onion
  • 100 g of feta
  • 3 eggs
  • 50 ml milk
  • 30 g of cream cheese
  • 6 sprigs of thyme
  • Herbes de Provence
  • chili flakes optional
  • Salt & pepper

Instructions
 

For the shortcrust pastry

  • Mix the flour and salt. Add the olive oil then the egg. Mix and add the water little by little until you get a nice dough.
  • Leave the dough to rest at least as long as you prepare the rest of the quiche (10-15 minutes). You can also prepare this dough the day before to save time.

For the quiche

  • Preheat the oven to 175 ° C (hot air or 200 ° C traditional heat).
  • Roll out the dough and form a circle about 30 cm in diameter. Place the dough in a tart pan lined with parchment paper.
  • Cut the mushrooms into strips. Peel the red onion and cut it into strips as well. Cut the feta into small cubes.
  • Then place the red onions on the bottom of the quiche, add the mushrooms and then the feta.
  • In a bowl, beat the eggs with the milk and cream cheese. Add salt, pepper, some Herbes de Provence and chili flakes (optional). Mix well. Then pour the mixture over the quiche.
  • Finally, place the thyme sprigs on top.
  • Place the quiche in the oven and bake at 175 ° C (fan oven or 200 ° C traditional heat) for 30-35 minutes.
  • Serve with a green salad.
