It really is one of my favorite dishes: quiche! So French but also so good. What I love most about quiche is that you can make quiches with almost anything. Today, I am sharing with you a recipe for a Mushroom, Feta and Red Onion Quiche.

Ingredients
For the shortcrust pastry
250gof flour
60mlolive oil
70mlof cold water
3gof salt
1egg
For the quiche
250gmushrooms
1red onion
100gof feta
3eggs
50mlmilk
30gof cream cheese
6sprigs of thyme
Herbes de Provence
chili flakesoptional
Salt & pepper
Instructions
For the shortcrust pastry
Mix the flour and salt. Add the olive oil then the egg. Mix and add the water little by little until you get a nice dough.
Leave the dough to rest at least as long as you prepare the rest of the quiche (10-15 minutes). You can also prepare this dough the day before to save time.
For the quiche
Preheat the oven to 175 ° C (hot air or 200 ° C traditional heat).
Roll out the dough and form a circle about 30 cm in diameter. Place the dough in a tart pan lined with parchment paper.
Cut the mushrooms into strips. Peel the red onion and cut it into strips as well. Cut the feta into small cubes.
Then place the red onions on the bottom of the quiche, add the mushrooms and then the feta.
In a bowl, beat the eggs with the milk and cream cheese. Add salt, pepper, some Herbes de Provence and chili flakes (optional). Mix well. Then pour the mixture over the quiche.
Finally, place the thyme sprigs on top.
Place the quiche in the oven and bake at 175 ° C (fan oven or 200 ° C traditional heat) for 30-35 minutes.
