Here’s a simple idea for Toast with Avocado and Red Onion Pickles. The sweetness of the avocado and the freshness of the cucumber work great with the slight acidity of the red onion pickles. Plus, I think the colors on this toast are beautiful.

This is a nice recipe for breakfast, brunch or a simple meal.

How to make Red Onion Pickles?

Red onion pickles taste much milder than raw onions and are slightly sour and sweet at the same time. They can be prepared in just a few minutes and then stored for about two to three weeks in the refrigerator.

Recipe for Toast with Avocado and Red Onion Pickle

For 2 servings you need the following ingredients.

Ingredients

  • 4 slices of wholemeal bread
  • 1 avocado
  • 12 cucumber slices
  • 2 tablespoons of red onion pickles (see recipe)
  • 1/2 lime
  • 1 teaspoon of olive oil
  • Sesame seeds, black and white
  • Salt & pepper

Preparation

Cut the avocado in half, remove the pit and place the flesh in a bowl. You can use a tablespoon to scoop out the flesh of the avocado without the skin.

Then mash the avocado with a fork. Add a pinch of salt and a few drops of lime.

Toast your slices of bread then add a spoonful of avocado cream, add 3 slices of cucumber and some red onion pickles.

Add salt and pepper. Finish with a drizzle of olive oil and possibly lime juice to taste. Add a few black and white sesame seeds for decoration.
