Main courses: my easy French recipes for every day
The main course is the heart of the meal, and on my blog you’ll find both slow-cooked dishes inspired by traditional French cooking and weeknight dinner ideas ready in thirty minutes. I’ve sorted them by occasion: French classics, everyday cooking and vegetarian dishes.
The great classics of French cooking
If there are dishes I love making when friends come over, it’s the classics of French cooking. People tend to think they’re complicated, but they’re really not, and best of all, most of them can be made ahead, so you spend the evening at the table instead of in the kitchen. My traditional beef bourguignon and my coq au vin work on the same idea: meat that simmers slowly in red wine with bacon and mushrooms. For something gentler, there’s my blanquette de veau, with its creamy sauce you can absolutely make the night before, or the famous tartiflette for when it’s cold out and you want melted reblochon (the one I make on repeat all winter).
Everyday cooking, the kind that keeps my kitchen running
If there’s one thing I grew up with, it’s always cooking a warm, balanced meal, even on the evenings when there isn’t much time. Here you’ll find plenty of quick recipes for eating well every day, dishes that come together in minutes or go straight into the oven so you end up with a good meal without having to watch over anything. My creamy Dijon mustard chicken is a one-pan dish that only takes a few minutes. My baked salmon and green asparagus all cooks together on a single sheet pan, just like my one-pan chicken, potatoes and green beans, the dish I reach for when I don’t feel like cooking or doing dishes. And for a quick dinner that always goes down well, you can make Breton galettes: it’s really fast, and you can vary the filling based on whatever’s in your fridge.
My vegetarian dishes that actually fill you up
As you know, I eat vegetarian regularly, and I know a lot of you struggle to find vegetarian recipe ideas. So here you’ll find my favorite vegetarian dishes: quick, filling, and rich in plant-based protein. My vegetarian stuffed zucchini are perfect in summer, and in winter you can try my vegetarian Hachi Parmentier. And when I want something quick and complete, I make my white bean and tomato stew, simple but delicious with a few nice slices of toasted bread.
