Brioche French Toast, soft and crispy!
Here is an ultra tasty recipe for Brioche French Toast, soft and crispy! It is a great classic of French cuisine that reminds me of my childhood.
French toast or pain perdu, as it is called in French, can be made with old bread or, as in this recipe, brioche. Brioche is more delicious than bread because it is naturally sweet. To bring a little freshness, I served this Brioche French toast with blueberries and blackberries.
How to make a soft and crispy French toast?
The art of French toast is that it is soft but still crispy on the outside! To do this, I have two advices for you:
- Be generous with the slices of brioche! I advise you to cut large slices of brioche, at least 3 cm thick.
- Caramelize instead of sweetening! The secret to crispy French toast is to caramelize it instead of just adding sugar at the end. To do this, I add the sugar to the pan directly with the butter and melt it to a caramel before adding the slices of brioche.

- 4 slices brioche bread, thick
- 2 eggs
- 15 cl of milk
- 20 g butter
- 20 g sugar
For decoration
- Blueberries
- Blackberries
- Ice sugar

Preparation
Cut the brioche into slices of about 3 cm.
Mix the eggs and milk. Whisk well to obtain a homogeneous liquid. Then, dip the slices of brioche on each side in the milk and egg mixture. Place on a plate.
Heat the butter and sugar in a pan. When the sugar and butter start to caramelize, add the slices of brioche. Cook for 3-5 minutes on each side, until nicely caramelized.
Serve on a plate and add blueberries and blackberries for decoration. Sprinkle with icing sugar.

- Brioche: You can replace the brioche with sandwich bread or stale bread.

Can the brioche French toast be prepared in advance?
I advise you to prepare these Brioche French Toast just before serving. However, if you need to prepare them ahead of time, you can prepare them as directed in the recipe and remove them from the pan shortly before they are golden brown.
Then, before serving, heat them up in a frying pan with a little butter or in the oven for 5-10 min at 160 °C.
