Think banana bread is already out? Not at all, I would say it is simply timeless! This time I wanted to try a vegan recipe as soft as possible because I hate vegan recipes that are just too dry.

The result was above my expectations, this banana bread is ultra soft and the chocolate chips just make it so tasty. Here is my recipe for Ultra Soft Vegan Banana Bread with Chocolate Chips.

A soft banana bread without eggs or dairy products, it is possible!

Vegan baking is quite a challenge because it is not always easy to obtain a soft cake without eggs, milk or butter. However, when you have found the right ingredients and the right dosage, you get surprising results. Often better for your health, even if you don’t follow a vegan diet, I really recommend you to give it a try.

This banana bread without eggs or dairy products (so lactose free ) is super soft. How is it possible ? I added vegetable milk to the dough. I chose oatmeal milk but almond or soy milk will be fine too.

In addition, I replaced some of the flour with ground almonds as well as a bit of cornstarch. This allows the dough to be less compact and automatically softer. Finally, I put three mashed bananas, against two in most recipes, it also helps to make this banana bread ultra soft.

Recipe for Ultra Soft Vegan Banana Bread with Chocolate Chips

For a banana bread you need the following ingredients.

Ingredients

  • 4 bananas
  • 100 ml of sunflower oil
  • 100 ml of vegetable milk (oatmeal or almond milk)
  • 40 g of agave syrup
  • 8 g of baking powder
  • 160 g of wheat flour
  • 60 g ground almonds
  • 15 g of cornstarch
  • 70 g of chocolate chips
  • 40g crushed almonds (optional)

Preparation

Preheat the oven to 175 ° C (top and bottom heat). In a bowl, mash 3 bananas. Then add the oil, agave syrup and vegetable milk. Stir well.

Mix the flour and the baking powder then add it to the bowl. Add the ground almonds and cornstarch. Mix well.

To finish add the chocolate chips and the crushed almonds. Pour the dough into an oiled cake tin.

Peel the last banana and cut it in half lengthwise. Place it on top as a decoration. Add a few crushed almonds for decoration as well. Bake for 35-40 minutes.
