What to do with red currants? Here’s a delicious recipe for Yoghurt and Red Currants Cake! The idea for this cake came to me when I had a few red currants left over. The result is simply wonderful!

Red currants, an underestimated fruit!

The red currants are small red berries, found in the form of a bunch. It can be picked between June and September. This small fruit is rich in vitamin C and contains a lot of antioxidants. The currant is unfortunately often forgotten in favour of other red berries, but it is a very healthy fruit and should be eaten more often. So don’t wait any longer to eat it!

However, red currants can be a little sour when eaten alone. You can use them to make jams and jellies or pies and cakes. Yoghurt goes very well with red berries in general and red currrants in particular.

Preparation of the Yoghurt and Red Currants Cake

What I love about yoghurt cake is how easy it is to make. You don’t need a scale, just use the yoghurt pot as a measuring glass. It’s child’s play!

Step 1: the yoghurt

First of all, start by pouring a yoghurt into a bowl. Keep the pot and use it to measure the other ingredients.

Step 2: The cake base

Add 3 pots of flour, 1/2 (6 g) sachet of baking powder, 1.5 pots of sugar, 1 pot of almond powder and 1/2 pot of sunflower oil. Add 1 sachet of vanilla sugar and 1 teaspoon of lemon zest.

I used a lime but you can use a lemon. It’s a matter of taste! Personally, I love the smell of lime.

Step 3: the eggs

Finally, pour three egg yolks into the mixture. Beat the egg whites and whisk them until stiff. Gently add the egg whites to the mixture. I advise you to add them at least three times.

Step 4: The red currants

Wash and dry the red currants carefully. Then, undo them from their grape. Add them to the cake dough.

Step 5: Baking

Preheat the oven to 175°C. Pour the cake dough into an oiled cake tin.

Bake for 30 min. Check the baking with a knife before taking the cake out of the oven. You can add icing sugar for decoration.
