What better way to start the day than pancakes? Served with fruits and yogurt, the pancake recipe that I offer today is really super healthy! In addition, it is a recipe without baking powder while keeping the texture of the pancakes very fluffy. Here is my recipe for Healthy Pancakes (without baking powder).

Pancakes without baking powder

I had the idea to create my own recipe for pancakes without baking powder which I also used for my recipe for Pancakes with Blueberries and Greek Yogurt , because I could not find any recipe on the internet that offered it. Why remove the baking powder? Quite simply because you may no longer have baking powder at home. And, in terms of taste, baking powder can also provide a taste that can be unpleasant.

However, there are alternatives to baking powder such as beating egg whites. This is what I did for the following recipe. I also added yogurt to the pancake batter to make them even more soft and fluffy.

Healthy pancakes (without baking powder)

Recipe for Healthy Pancakes (without baking powder)

For 3 servings you need the following ingredients.

Ingredients

For the pancakes

  • 3 egg yolks
  • 50 g sugar
  • 100g of flour
  • 100 g yogurt
  • 3 egg whites
  • 3 drops of lemon juice
  • Neutral oil

For decoration

  • 100 g yogurt
  • Fresh fruits: strawberries, raspberries, blueberries, cherries
  • Honey or agave syrup

Preparation

In a bowl, beat the egg yolks with the sugar until the mixture turns white. Then add the flour and yogurt. Mix everything.

In another bowl, beat the egg whites with 3 drops of lemon until stiff. Gently add the egg whites into the cake batter.

In a pan, heat a little neutral oil. Place a small ladle of pancake batter in the hot pan. Cook over medium heat for about 1 minute, then flip the pancake and cook 1 minute more.

Serve the pancakes with fresh fruit and a spoonful of plain yogurt. You can add a little honey or agave syrup on top.

Note

For even more airy pancakes, add an extra egg white!
