Blueberry and Greek Yogurt Pancakes

This morning, I felt like pancakes. Since I had some blueberries and Greek yogurt left over, which I had used for my Fish and Cauliflower Tacos recipe, I tried a recipe for Blueberry and Greek Yogurt Pancakes.

For this recipe, I did not use baking powder. I replaced it with beaten egg whites and Greek yogurt to give the pancakes a nice fluffiness. Here is the recipe step by step!

The perfect recipe for pancakes without baking powder

I’ve been looking for the perfect recipe for pancake dough for a long time. For me, it was important to find a pancake recipe without baking powder. After several attempts, I finally found the perfect quantities and ingredients to make the pancakes soft and fluffy.

Ingredients:

  • 3 egg yolks
  • 50 g of sugar
  • 100 g flour
  • 100 g Greek yogurt
  • 3 egg whites
  • 3 drops of lemon juice
  • vanilla extract (optional)

These quantities make about 12 pancakes.

Step 1: Pancake batter with Greek yogurt

First, whisk the egg yolks with the sugar in a bowl until you get a creamy texture. Then add the flour and Greek yogurt and mix.

Step 2: Beaten egg whites

In another bowl, beat the egg whites with 3 drops of lemon until stiff. Finally, gently fold the egg whites into the egg yolk mixture.

Step 3: Blueberries

Add a handful of blueberries to the dough.

Then, prepare the blueberry compote that will accompany the pancakes. In a bowl, mix 250 g of blueberries with 2 tablespoons of brown sugar. Cook in the microwave at 800 Watt for 1 min 30 sec.

Step 4: Baking the pancakes

In a frying pan, heat oil, such as sunflower or rapeseed oil. You can also cook the pancakes with butter. Personally, I’ve tried both and I think I prefer to cook with butter!

Put a good spoonful of pancake batter in the hot pan. Cook over medium heat for about 1 minute, then turn the pancake over and cook for another minute.

Step 5: Presentation

Place 3 to 4 pancakes on a plate. Add the blueberry compote.

You can serve with a little Greek yogurt, it will soften the acidity of the blueberries.

  • Add a handful of blueberries to the dough.
  • Heat a tablespoon of butter in a frying pan.
  • Put a good spoonful of pancake batter in the hot pan.
  • Cook over medium heat for about 1 minute, then turn the pancake over and cook for another minute.

Blueberry compote

  • In a small bowl, mix 200 g of blueberries with 2 tablespoons of brown sugar.
  • Cook in the microwave at 800 Watt for 1 min 30 sec.
  • Serve the pancakes with the blueberry compote and Greek yoghurt.
