This Garlic and Herb Butter is very simple to make and can be used to flavor many dishes: vegetables, grilled meats or potatoes. I even serve it simply as an aperitif with toasted baguette. It’s so good!

Ingredients to make a Garlic and Herb Butter

To make this Garlic and Herb Butter, you only need a few ingredients:

  • Butter: Choose a quality butter because it is the heart of this recipe. The butter must contain a minimum of 82% fat. Do not choose salted butter because you will salt it yourself. Avoid low-fat butters which generally contain less fat but more chemicals to thicken the butter.
  • Fresh herbs: For this recipe, I selected three types of fresh herbs (parsley, chives and dill). You can add other herbs like chervil, coriander, fresh thyme or even basil.
  • Garlic: Butter and garlic, a great classic! No need to explain that garlic gives this butter a delicious taste. Depending on whether you want a more or less winged taste, you can put between half a clove of garlic and a whole one. If you don’t like garlic, you can remove it.
  • Lemon: Lemon juice will slightly spice up the taste of this garlic and herb butter and add a touch of freshness.
  • Capers: Capers are not mandatory but they give an original touch and also a little acidity.
  • Fleur de sel: The fleur de sel is the noble part of the salt production, harvested on the surface of salt marshes. The fine crystals of fleur de sel are delicious mixed with butter as they allow to salt it elegantly.

The technique for making this Garlic and Herb Butter

This Garlic and Herb Butter is very easy to make!

The first step is to let the butter soften at room temperature. To do this, take the butter out of the refrigerator at least two hours before you start the recipe. If it is too hard, you will not be able to incorporate the herbs and other ingredients.

Then, simply chop the ingredients of the recipe as finely as possible and mix them into the butter. For this, I simply used a fork.

You can also use anelectric whisk, being careful not to get it everywhere!

And now your Garlic and Herb Butter is ready to be served!

Wraping flavored butter

To preserve this Herbal Butter, it is recommended to wrap it before putting it in the refrigerator. Butter is a fat that tends to absorb odors. But you don’t want your Garlic and Herb Butter that tastes like cheese!

My technique for wraping this homemade flavored butter is to wrap it in parchement paper. Find my technique in pictures :

Recipe for Garlic and Herb Butter

For 10 servings, you need the following ingredients

Ingredients

  • 250 g of butter
  • 1 clove of garlic
  • 1 cup fresh herbs: parsley, chives, dill
  • 1 tablespoon of capers
  • 1/2 lemon
  • Fleur de sel
  • Pepper
  • 1 teaspoon of olive oil

Preparation

Let the butter soften for at least 2 hours at room temperature.

Meanwhile, wash the fresh herbs (parsley, chives and dill) and dry them on paper towels. Chop them finely. Chop capers and garlic clove.

Place the butter in a bowl and add the garlic, herbs, capers, lemon juice and a pinch of fleur de sel and pepper. Finish with the olive oil.

Using a fork, whip the butter until the ingredients are well incorporated. Form butter quenelles with a quenelle spoon or tablespoon. Decorate with a little fleur de sel and fresh herbs.

Note

I serve this Garlic and Herb Butter simply with toast or use it to sauté vegetables.

Can I freeze this flavored butter?

Yes, you can! You can freeze this Garlic and Herb Butter, wrapped in parchement paper (see above). Or, you can place the butter in an ice cube tray to make individual portions.
