This Lemon Butter is very easy to make and can be used to spice up many dishes: fish, vegetables or pasta. I even serve it simply as an aperitif with toast. Absolutely delicious!

Ingredients to make a homemade Lemon Butter

To make this Lemon Butter, you need only three ingredients: butter, lemon and fleur de sel.

  • Butter: Choose a quality butter because it is the heart of this recipe. The butter must contain a minimum of 82% fat. Don’t choose salted butter and avoid low-fat butters which generally contain less fat but more chemicals to thicken the butter.
  • Lemon: Choose an untreated yellow lemon as you will be using the peel. It is possible to replace a lime, which will bring a more floral note.
  • Fleur de sel: The fleur de sel is the noble part of the salt production, harvested on the surface. salt marshes. The fine crystals of fleur de sel are delicious mixed with butter as they allow to salt it elegantly.

The technique for making this Lemon Butter

This Lemon Butter is very easy to make!

The first step is to let the butter soften at room temperature. To do this, take it out of the refrigerator for at least 2 hours. If it is too hard, you will not be able to incorporate the lemon and fleur de sel.

Then, simply grate the lemon zest. Be careful to grate only the yellow part and not the white part called which is bitter. Then cut the lemon in half and add the juice of the lemon half. Finally, add the fleur de sel.

Then, simply mix well and whip the butter with a fork to incorporate the lemon juice, zest and salt. It takes a few minutes. You can also use an electric whisk to save time.

Wraping a homemade flavored butter

To preserve this Lemon Butter, it is recommended to wrap it before putting it in the refrigerator. Butter is a fat that tends to absorb odors. But you don’t want lemon butter that tastes like cheese!

For 10 servings, you need the following ingredients

  • 250 g of butter
  • 1 untreated lemon
  • Fleur de sel

Preparation

Let the butter soften for at least 2 hours at room temperature.

Place the butter in a large bowl, grate the lemon zest. Then pour in the juice of half the lemon. Add a generous pinch of fleur de sel.

Using a fork, whip the butter until the lemon juice is well incorporated. Form butter quenelles with a quenelle spoon or tablespoon. Decorate with a little fleur de sel and lemon zest.

Serve with toast or use this butter to sauté vegetables such as green asparagus or to season white fish.
