Grilled Zucchini with Oregano

Zucchini is one of my favorite vegetables. And one of the easiest ways to prepare it is to roast them in the oven with a little garlic and olive oil. To season, I added dried oregano. Here is my recipe for Grilled Zucchini with Oregano.

The variety of zucchini I used is a “genovese” zucchini, straight from Italy. It is smaller than the classic zucchini and has a lighter green color. Of course, there is no problem to use any type of zucchini: green, yellow, round etc.

The benefits of zucchini

We all know that eating vegetables is good for your health. But what exactly are the benefits of zucchini?

First of all, zucchini is rich in fiber. They therefore facilitate digestion and help control blood sugar and cholesterol levels. Some people may have some difficulty digesting zucchini. In this case, prefer young zucchini, they are more digestible.

Zucchini are also rich in vitamins and minerals, including potassium, which helps regulate blood pressure, and beta-carotene, a vitamin known to be good for eyesight.

Recipe for Grilled Zucchini with Oregano

For 4 servings you need the following ingredients.

Ingredients

  • 600 g zucchini
  • 3 whole garlic cloves
  • 2 tablespoons dried oregano
  • 50 ml olive oil
  • 1 pinch of salt

Preparation

Preheat the oven to 180 °C (fan oven).

Wash the zucchini and remove the ends. Cut them in half and then in 4 lengthwise.

Place them in a salad bowl. Add the olive oil and oregano. Mix well. Personally, I mix it all together directly with my hands so that the oil and oregano spread evenly over the zucchini.

Place the zucchini on a baking sheet lined with baking paper. Add the whole garlic cloves.

Roast in the oven for 15 minutes. Allow to bake for 5 minutes more if necessary. Salt and serve with homemade pesto.

Note

These zucchini are delicious cold with a salad or on toast with pesto and mozzarella.
