Here’s a very simple recipe for an healthy avocado and tomato toast. This is one of my favourite ways to eat avocado!
How do you choose your avocado?
When you eat an avocado like this on toast, it is essential to select a ripe avocado. I’ve unfortunately had the bad experience several times: I prepare everything for a slice of avocado bread, and then I realize that the avocado is either too ripe or not ripe enough!
In order to choose the right avocado, it must first be a nice dark and homogeneous color. If the color of the avocado varies between the top and the bottom of the fruit, it is possible that it is not ripe enough. There is a (almost) unbeatable method to put all the chances on your side, it is to look at the colour below the peduncle. The peduncle is the “tip” of the avocado where the avocado was attached to the tree. Remove the peduncle and if the colour is brown, the avocado is already too ripe. If the colour is beige, the avocado should be left to ripen a little longer. If you see a light green colour, it is perfect!
The avocado is getting popular again!
For some years now, the avocado has been present almost everywhere! In salads, toppings, smoothie, it can even replace eggs in a vegan chocolate mousse. Indeed, avocado is excellent for your health, as long as you eat it regularly but not too much.
Why not eat them every day? First of all, because the avocado remains a rich aliment. Secondly, especially because it is always important to vary its consumption to avoid, as was the case with avocado, overproduction and possible negative consequences on the environment.
However, the avocado has many health benefits. In particular, thanks to its good fats, it helps to reduce the level of bad cholesterol. It is also rich in vitamin K and vitamin B9, a very important vitamin for pregnant women.

I really like the combination of avocado and tomato. The tomato brings acidity and goes very well with avocado. Do not hesitate to pour a dash of olive oil on the toast, it will wonderfully enhance the taste of the avocado.

Healthy Avocado and Tomato Toast

- 2 slices of bread or a small roll
- 1 tomato
- 1 avocado
- 1 tsp. olive oil extra virgin
- 4 basil leaves
- Cut the avocado and tomato into thin slices.
- Place a few slices of avocado on the bread.
- Place a few slices of tomato on top.
- Season with a little salt and pepper.
- Add a drizzle of olive oil and basil leaves.
