How to cut cucumbers into thin slices?

What makes this recipe for Healthy Cucumber and Salmon Toast so special are the cucumber slices delicately placed on top of the salmon. Not only do the cucumber slices make these toasts elegant, but they add a crunchy touch.

To cut my cucumber into thin slices, I used my vegetable slicer from Triangle that I work with regularly (link to the vegetable slicer). This allows me to cut cucumbers or other vegetables with a thickness of 2 mm which is almost impossible with a knife.

If you do not have a vegetable slicer, you can use a mandolin or a peeler.

Recipe for Healthy Cucumber and Salmon Toast

For 2 servings you need the following ingredients.

Ingredients

  • 4 slices of wholemeal bread
  • 1 cucumber
  • 100 g of plain yogurt
  • 150 g smoked or cooked salmon steak
  • 5 dill sprigs
  • 6 stems of parsley
  • 4 sprigs of mint
  • 1 lime
  • Salt and pepper
  • Olive oil

Optional

  • White and black sesame seeds, toasted
  • Chilli flakes
  • Fleur de sel

Preparation

Chop dill, mint and parsley finely. Crumble the smoked salmon. Wash the cucumber, remove the ends and cut it lengthwise into strips.

In a bowl, mix the yogurt with the dill, mint and fresh parsley. Add salt, pepper, lime and a drizzle of olive oil.

Spread the yogurt sauce on the slices of wholemeal bread. Add the smoked salmon and then place the cucumber slices in waves.

You can sprinkle with toasted sesame seeds and chili flakes. Finish with a drizzle of olive oil and fleur de sel.

Can I substitute some of the ingredients ?

As with every blog post, here are some tips for substituting ingredients in this recipe:

  • Cucumber: You can replace cucumber with other raw vegetables such as carrots, raw zucchini or radishes.
  • Smoked salmon steak: You can replace the smoked salmon steak with sliced smoked salmon or drained tuna.
  • Yogurt: You can replace the yogurt with hummus for a dairy-free version or with fresh cheese or crème fraîche.
  • Dill, mint and parsley: You can add or replace these with other fresh herbs like chives, tarragon or basil.

Can I prepare these toasts in advance?

I don’t recommend making these toasts too far in advance. However, you can make the yogurt dip ahead of time and cut the cucumber slices ahead of time as well.

How long do these toasts keep?

These toasts can only be kept for 6-8 hours maximum, after which time the cucumber may soak the bread.

Can we freeze these toasts?

No, I don’t recommend freezing these toasts.
