Looking for a refreshing toast idea? Here is a recipe full of sunshine : an Hummus, Tomato and Mozzarella Toast! This toast is perfect for a healthy breakfast or a quick meal.
I had the idea for this toast because a few days ago as I made a homemade pizza and I still had good mozzarella as well as fresh basil and oregano. Since I always have Homemade Hummus (see my recipe) to hand, I decided to put it all together on a slice of bread: a treat!

Recipe for Hummus, Tomato and Mozzarella Toast
For 2 servings you need the following ingredients.
Ingredients
- 2 slices of bread
- 2 tablespoon of hummus (see my recipe for Homemade Hummus without Garlic)
- 2 tomatoes
- ¼ of a mozzarella ball
- 8 basil leaves, fresh
- 8 oregano leaves, fresh
- Salt
- Pepper
- extra virgin olive oil
Preparation
Cut the tomatoes into small pieces. Crumble the mozzarella.
Spread the slices of bread with hummus. Add the tomatoes, mozzarella, basil leaves (you can optionally chop them) and the fresh oregano.
Season with a pinch of salt and pepper. Add a dash of extra virgin olive oil.
