Kale, Apple and Feta Salad

Where does Kale come from?
Kale or kale is a vegetable from the cabbage family or rather Bracicaceae . Unlike traditional cabbages like red cabbage or white cabbage, kale does not form a head and comes in long stems with wavy leaves. The stems can reach a meter long.
Kale has a delicious, slightly sweet taste. It can replace spinach in many dishes while maintaining a firmer texture than spinach.
It is often found in traditional German cuisine in the form of a pot-au-feu called Grünkohl-Eintopf. Across the Atlantic, in the United States or Canada, kale is very popular and can be found in all forms: smoothie, curry, chips etc.
Kale, Apple and Feta Salad Recipe
For about 2 servings you need the following ingredients:

For the salad
- 1 large bunch of kale (kale)
- 1/2 pomegranate
- 100 g of feta
- 20 g of pine nuts
- 1 apple
- 1 tablespoon of butter
For the salad dressing
- 1 tablespoon of cottage cheese or yogurt
- 4 tablespoons of olive oil
- 1 teaspoon of tahini
- 1 lime, juice
- salt
- pepper
Preparation
Step 1: The kale
Wash the kale and dry it. Then cut it finely. Put it on a plate or in a salad bowl.

Step 2: The sauce
Combine the cottage cheese or yogurt, olive oil, tahini and lime juice. Add salt and pepper. Check the taste and readjust the amounts if necessary. Here are some indications:
- If the sauce is too salty, add cottage cheese and olive oil
- If the sauce is too tangy, add a little salt, olive oil and cottage cheese
Pour the sauce over the kale.
Step 3: Pomegranate and pine nuts
Cut the pomegranate in half and seed it. Add the seeds to the salad.
Toast the pine nuts in a pan without oil. They should just take on a golden color. Then add them to the salad.
Step 4: The feta
Cut the feta into small cubes and add it to the salad.
Step 5: The apple
Wash and peel the apple. Remove the seeds and cut it into strips about 1 cm wide.
In a frying pan, heat a tablespoon of butter. As soon as the butter has melted, add the apple slices. Lower the heat and brown the apples until lightly golden.
Place the apple slices on the salad. Eat lukewarm or cold.
