Here is a very simple recipe, vegan and healthy at the same time: Oven Roasted Carrots with Hummus! These carrots can be served as a starter, side dish or even as a main course with Turkish pide bread or focaccia.

How to prepare oven roasted carrots

Basically, I’m not very fond of cooked carrots. However, oven roasted carrots are an exception because roasting them in the oven gives them a nice, slightly crispy texture and a caramelized flavor.

Plus, like all oven cooked vegetables, oven roasted carrots are super quick and easy to prepare. To do this, simply cover them well with olive oil and place them on a baking sheet covered with either a baking mat, which is more ecological because it can be reused, or with parchment paper.

You can then add spices like cumin and/or coriander powder or herbs like thyme or rosemary. Then bake in the oven for 25 minutes at 180 °C. And that’s it!

How to make homemade hummus ?

For this recipe, you can choose to buy a ready-made hummus to save time. In this case, I advise you to look carefully at the list of ingredients and avoid choosing hummus with too much sugar or salt.

And of course, I recommend making your own homemade hummus! A while back, I posted my favorite recipe forHomemade Hummus without Garlic. Why without garlic? Because I like to eat hummus for breakfast and so I prefer not to add garlic to it. Also, the garlic is sometimes too present and hides the sweetness of the chickpeas.

Recipe for Oven Roasted Carrots with Hummus

For 3 portions, you need the following ingredients

Ingredients

  • 12 multicolored carrots (orange, yellow, purple)
  • 1 pomegranate, seeded
  • 100 g of hummus, see my recipe forHomemade Hummus without Garlic
  • 6 stems of parsley
  • Salt and pepper
  • Olive oil
  • Lime (optional)

Preparation

Wash the carrots and peel them. Place them on a baking sheet covered with a baking mat or parchment paper.

To oil the carrots well, I place them in a bowl and add a generous drizzle of olive oil. Then, mix the whole with my hands, distributing the oil well on all the carrots.

Add a pinch of salt. Then roast the carrots for 25 minutes in the oven at 180°C (fan oven).

Meanwhile, prepare your hummus if you are making it at home.

Place the hummus on a plate. Place the carrots on top. Add a pinch of pepper, the pomegranate and a few parsley leaves. Finish with a drizzle of olive oil and possibly lime.

Serve with Turkish pide bread or focaccia.

Frequently Asked Questions

Can I substitute some of the ingredients ?

As with every blog post, here are some tips for substituting ingredients in this recipe:

  • Multicoloured carrots: Of course, this recipe works very well with classic carrots or even other vegetables such as cauliflower or Brussels sprouts.
  • Hummus: You can replace the hummus with another sauce such as guacamole, yogurt with fresh herbs or feta cream.
  • Pomegranate: You can remove the pomegranate. It serves as a decoration but also adds crunch and freshness to the dish.
  • Parsley: You can replace parsley with cilantro for cilantro fans!

Can we add spices to the carrots?

Yes, you can! As explained above, cumin and coriander go very well with carrots, as do thyme, rosemary and herbes de Provence.

Can we prepare these Oven Roasted Carrots and Hummus in advance?

You can prepare the hummus in advance. For the carrots, you can also prepare them several hours in advance and only put them in the oven at the last minute.

Can we freeze these Roasted Carrots and Hummus?

You can freeze the roasted carrots as well as the hummus. However, I recommend that you freeze them in separate containers.

    This is a delicious recipe. My young nephew is very picky and doesn’t eat any meat, chicken or fish but he loves this. It’s also beautiful for everyone else, fussy or not!
