Teriyaki? What is that ?

Teriyaki refers to the name of a sauce in Japanese cuisine. Often this sauce is used to season poultry or fish.

This sauce is very easy to make because it only requires 3 ingredients: soya sauce, mirin (rice vinegar), sake (wine made from rice) and sugar. You can also add spices like ginger or garlic.

In the original version, the sauce must be cooked for several minutes in order to obtain a reduced and concentrated sauce. You can find the authentic Japanese recipe of the teriyaki sauce in the article of Just One Cook Book.

In the following version, I did not reduce the sauce to offer you a quick and simple recipe while keeping the taste of teriyaki sauce!

Recipe for Teriyaki Bowl with tofu (vegan)

For about 4 servings you need the following ingredients.

Ingredients

For the rice

  • 150 g of rice, ideally Japanese sushi rice
  • 1 teaspoon of rice vinegar, mirin

For the teriyaki tofu

  • 200 g tofu
  • 2 teaspoons of soy sauce
  • 2 teaspoons of rice vinegar, mirin
  • 2 teaspoons of sake
  • 1/2 teaspoon of brown sugar
  • 1 teaspoon of sesame oil
  • Neutral oil

For the toppings

  • 1/2 broccoli
  • 100 g of mushrooms
  • 1 avocado
  • 8 cucumber slices
  • 1 teaspoon of soy sauce
  • sesame seeds, for garnish

For the side sauce

  • 2 teaspoons of soy sauce
  • 1 teaspoon of rice vinegar
  • 1 teaspoon of sesame oil

Preparation

Step 1: Rice

Cook the rice as directed on the package.

Be careful! It is important to rinse the rice well before, it is a step that we tend to skip but it is very important to do it.

Once the rice is cooked, add the rice vinegar and mix well.

Step 2: Prepare the tofu

Drain the tofu and place it in a clean tea towel. Lightly squeeze the tofu to release as much liquid as possible.

If you have time, place a weight on your tofu (a cutting board or a book, for example). Then leave for a few minutes and the towel will absorb the liquid slowly.

You can also cut the tofu in half in the height and place the two pieces next to each other in the tea towel to absorb the liquid from inside.

Step 3: Marinate the tofu

Cut the tofu into cubes. Then place the cubes in a bowl.

Then add the soy sauce, rice vinegar, sake, sugar. Mix well. Let marinate while you prepare the rest.

Step 4: Broccoli, avocado and mushrooms

Cut the broccoli into florets. In a saucepan, heat some water. Once the water boils, add the broccoli. Leave to cook for about 10 minutes. The broccoli should stay crunchy.

Cut the avocado in half. Remove the skin and cut it into thin strips.

Cut the mushrooms into strips. Then heat a little oil in a pan. Add the mushrooms and brown them for about 5 minutes. Add a dash of soy sauce to season them.

Step 5: To finish …

Finally, heat some oil in a pan. Add the tofu cubes and brown them for about 10 minutes. At the end of cooking, add sesame oil.

In a bowl, place a portion of rice, add the broccoli, avocado, mushrooms and a few slices of cucumber. Then add the tofu in the center. Decorate with a few sesame seeds.

Serve this bowl with the side sauce.
