If you’re a fan of quiches and savory tarts, you’ll love Flammkuchen! Just like quiches, they’re versatile and easy to make, with endless topping possibilities. Whether for a savory meal or a sweet dessert, Flammkuchen offers a perfect base—try it with apples for a dessert version!

For this vegetarian Flammkuchen, I used crème fraîche, grated Parmesan, fennel, and fresh thyme. After baking, I topped it with creamy burrata that melts beautifully over the warm fennel—it’s pure bliss!

Vegetarian Fennel Flammkuchen Recipe

For one Flammkuchen, you need the following ingredients

Ingredients

For the dough:

  • 160 g flour (1 ¼ cups)
  • 6 tablespoons of water (about ⅓ cup)
  • 4 tablespoons of olive oil (¼ cup)
  • A pinch of salt

For the filling:

  • Olive oil
  • 1 fennel
  • 1 burrata ball
  • 2 tablespoons of crème fraîche (about ⅛ cup)
  • 4 sprigs of thyme
  • 1 tablespoon of grated Parmesan (about ¼ cup)
  • Arugula leaves (optional)

Preparation

Step 1: The dough

Combine the flour, water, olive oil and salt. Form a ball with the dough.

Let the dough rest for 30 min.

Step 2: The fennel

Wash the fennel and cut it into strips.

Step 3: Garnish

Preheat the oven to 220 ° C (or higher if possible).

Roll out the dough thinly using a rolling pin. The dough should be about 5 mm thick.

Flammkuchen

Spread the creme fraiche on the dough.

Add the grated Parmesan.

Add the fennel.

Place a few sprigs of thyme. Finish with a drizzle of olive oil. Then salt and pepper.
