Flammkuchen, a great alternative to quiche!

I have a lot of quiches and savory tarts because they are easy to make and there are so many different recipes that you never get tired of them. It’s the same with Flammkuchen!

Once you have prepared the dough, you can top it with (almost) anything. You can even make them prepare for dessert with apples for example.

For this vegetarian Flammkuchen recipe, I garnished my dough with creme fraiche, parmesan, fennel and thyme. Then, after cooking I added pieces of burrata on the still hot Flammkuchen. The burrata melts on the fennel … It’s a delight !

Vegetarian Fennel Flammkuchen Recipe

For one Flammkuchen, you need the following ingredients

Ingredients

For the dough

  • 160 g flour
  • 6 tablespoons of water
  • 4 tablespoons of olive oil
  • a pinch of salt

For the filling

  • 1 fennel
  • 1 burrata
  • 2 tablespoons of creme fraiche
  • 4 sprigs of thyme
  • 1 tablespoon of parmesan, grated
  • Arugula leaves (optional)
  • Olive oil

Preparation

Step 1: The dough

Combine the flour, water, olive oil and salt. Form a ball with the dough.

Let the dough rest for 30 min.

Step 2: The fennel

Wash the fennel and cut it into strips.

Step 3: Garnish

Preheat the oven to 220 ° C (or higher if possible).

Roll out the dough thinly using a rolling pin. The dough should be about 5 mm thick.

Spread the creme fraiche on the dough.

Add the grated Parmesan.

Add the fennel.

Place a few sprigs of thyme.

Finish with a drizzle of olive oil. Then salt and pepper.

How to vary this recipe?

You can vary this recipe, here are some ideas:

  • Replace the fennel with fresh spinach
  • Replace the burrata with Mozzarella or the feta cheese. If you add feta, place it directly on the dough before baking.
  • Add mushrooms thinly cut before baking also.
