As many of you liked this recipe, I made it again, this time adding avocado, scrambled eggs and cheddar cheese! Here is my recipe for Avocado and Scrambled Eggs Wrap, #tortillatrend style.

This recipe is super easy and quick, perfect for a last minute lunch!

Wrap Hacks and #tortillatrend, what is it?

The Wrap Hack and the #tortillatrend were everywhere on social networks in January 2021, especially on TikTok and Instagram . In a nutshell, this is a way to fold a tortilla to form a triangular sandwich. You will find all my explanations (with even a video ) in the recipe below.

Recipe for Avocado and Scrambled Eggs Wrap, #tortillatrend style

For 2 people (two tortillas) you need the following ingredients.

Ingredients

  • 1 tortilla
  • 1 avocado
  • 3 eggs
  • 50g cheddar cheese, grated
  • 1 red onion
  • Salt and pepper
  • Chili flakes (optional)
  • Olive oil or other type of oil

Preparation

Start by breaking the eggs into a bowl. Add salt and pepper. Add a chili flakes if you like it. Beat the eggs.

In a frying pan add a little oil, then pour the eggs. Stir constantly for a few minutes until the scrambled eggs are cooked.

Cut the avocado in half, remove the core and mash it with a fork. Cut the red onion into thin strips.

Then, cut the tortilla in its radius (i.e. as if you were going to cut it in half but stopping in the middle). Place a portion of scrambled eggs, avocado, cheddar cheese and red onions on each quarter tortilla. Fold each quarter over each other in a clockwise direction (see video ).

In a pan, heat a little oil and heat the wrap for about 1 to 2 minutes on each side.
