Which fish to choose for a fish burger?

You can choose almost any type of fish to make a fish burger! However, I advise you to select a seasonal fish. It is not necessary to choose a noble fish because it will then be chopped and then seasoned.

The ideal is to take a fillet of fresh fish such as cod, pollack or whiting. You can also choose salmon or a mixture of white fish and salmon.

Recipe for Fish Burger with Tartare Sauce

For 4 people you need the following ingredients.

Ingredients

For the fish burger

  • 4 burger buns
  • 2 handful of arugula
  • 2 tomatoes
  • 4 salad leaves
  • 12 cucumber slices
  • 1 bunch of dill
  • Olive oil
  • Chili flakes (optional)

For the fish patties

  • 400 g of fresh fish, cod type
  • 6 stalks of chives
  • 1/2 lemon, untreated
  • 2 tablespoons of breadcrumbs
  • 1 egg
  • Salt
  • Pepper

For the tartare sauce

  • 230 g mayonnaise
  • 1 hard-boiled egg yolk
  • 1 teaspoon of mustard
  • 1 spring onion, the white part only
  • 2 pickles
  • 1 tablespoon of capers
  • 1 bunch of tarragon
  • 1 bunch of parsley
  • 1 bunch of chervil
  • Salt
  • Pepper

Preparation

For the tartare sauce, start by slicing the pickles and capers finely. Then chop the white part only of the spring onion. Chop the tarragon, parsley and chervil.

Finally, mix the mayonnaise, hard-boiled egg yolk, mustard, pickles and herbs. Add salt and pepper. Mix well. Your tartar sauce is ready.

For the fish patties, start by chopping the fresh fish. Place it in a bowl and add the egg, breadcrumbs, finely chopped chives, and the zest of half a lemon. Add salt and pepper. Mix well and form 4 rather thick patties.

In a frying pan, add a drizzle of olive oil and brown the fish patties for about 3-5 minutes on each side. Cover the pan with a lid while cooking.

Toast the burger buns. Spread each side with tartare sauce. Then place on the lower part of the burger bun a slice of salad, 3 slices of cucumber, the fish patty, 1-2 slices of tomato, arugula and a little dill. Season with salt and pepper and add a few chili flakes (optional). Then close with the top of the burger bun.

Serve with a salad or homemade French fries.
