Do you sometimes crave chocolate during the day, but you don’t feel like eating chocolate bars full of sugar and fat? Here is a super simple recipe for a Healthy Puffed Quinoa and Chocolate Snack ! These chocolate squares made with puffed quinoa contain only 120 calories! Plus, they’re vegan and gluten-free.

What is puffed quinoa?

For this healthy quinoa and chocolate snack recipe, you need puffed quinoa. Be careful not to confuse them with the classic quinoa seeds. The puffed quinoa looks like small beige balls, very light in weight, and empty inside. They are used as is to add to homemade granola, muesli or on porridge.

The preparation of puffed quinoa is the same as for popcorn. The quinoa seeds, rinsed and dried beforehand, are heated which makes them swell and obtain their ball shape.

Personally, I bought my puffed quinoa ready-made, as I don’t use it often enough to make it worthwhile to make it at home. However, if you feel like making your own puffed quinoa, I recommend this recipe for Popped Quinoa by Pepperbowl.

Healthy Quinoa and Chocolate Snack Recipe

For 16 servings, you need the following ingredients

Ingredients

  • 2 cups puffed quinoa (150 g)
  • 200 g of dark chocolate, 70 %
  • 1 tablespoon of coconut oil
  • 1 tablespoon almond butter
  • 2 tablespoons of agave syrup

Preparation

Melt the chocolate and coconut oil in a double boiler.

In a bowl, pour the puffed quinoa, melted chocolate, almond butter and agave syrup. Mix everything well.

Line a glass pan with baking paper. Then pour the puffed quinoa chocolate over the top, spreading it out and flattening it well. Then place in freezer for 1 hour.

Remove from freezer, remove baking paper and cut into 16 squares. Keep the chocolate and quinoa squares in the refrigerator.

Can I substitute some of the ingredients ?
