Looking for a quick, simple and healthy meal at a time ? This Pan Fried Gnocchi with Green Vegetables is what you need.

Personally, I always have a few frozen vegetables in stock. I chose vegetables without seasoning to use them for all types of recipes. So, for this Pan Fried Gnocchi with Green Vegetables recipe, I combined fresh vegetables (zucchini and fennel) and frozen vegetables (green beans and peas). Of course you can also use only fresh or frozen vegetables. This saves time while eating healthy.

Gnocchi, pre-cooked or homemade?

To save time, you can make this Pan Fried Gnocchi with Green Vegetables with pre-cooked gnocchi (be careful, however, to choose quality products) bought in the supermarket. It remains a healthy dish and above all quick to make, perfect when you are working from home or coming home late at night and you don’t have much time to cook.

Pan Fried Gnocchi with Green Vegetables

Recipe fro Pan Fried Gnocchi with Green Vegetables

For 4 servings you need the following ingredients.

Ingredients

  • 500 g of gnocchi, precooked
  • 2 zucchini
  • 1 fennel
  • 2 cups frozen green peas
  • 2 cups green beans, frozen
  • 2 cloves garlic
  • Olive oil
  • Salt and pepper
  • 1 lime
  • Fresh herbs: Dill, parsley

Preparation

Wash then cut the zucchini into slices. Wash the fennel and cut it into strips.

In a pan, heat a little olive oil. Add the chopped garlic cloves. Sauté for 30 seconds.

Add the zucchini and fennel. Sauté for 5-6 minutes. Add the peas and green beans while still frozen. Season with salt and pepper. Then, chop the fresh herbs and add them to the pan. Stir well and lower the heat.

In another pan, brown the gnocchi in olive oil for 3 minutes. Add the gnocchi to the pan of green vegetables. Check the seasoning and add a dash of lime juice.

Serve it all with a drizzle of olive oil.
